Lemon-Pepper Sea Scallops

If you know me, you know I am not one for seafood so this recipe was my first big jump into expanding my palette! This super easy and quick meal is a sure favorite that will have to be saved for more special occasions moving forward because nobody told me scallops were $40 a pound until I looked at the grocery bill once I got home…oops! We found this recipe from the Weight Watchers Annual Recipes for Success 2001 cookbook that I found at a thrift store.

Let’s get cooking 👇🏼:

YIELD: 2 servings (serving size: 1¼ cups scallop mixture)

1 pound sea scallops

1 tbsp vegetable oil

1 onion, halved and thinly sliced

2 garlic cloves, minced

1/4 cup clam juice

2 tbsp mirin

1 1/2 tsp lemon-pepper seasoning

1 tbsp lemon juice

2 tbsp minced fresh chives

 

  1. Place scallops on paper towels to remove excess moisture. I covered on both top and bottom.
  2. Place a large nonstick skillet over high heat until hot (like really hot). Add half of the scallops; cooking 2 minutes on each side or until browned. Remove scallops from skillet; scrape off any residue in pan with a wooden spoon. Repeat procedure with remaining scallops!
  3. Heat oil in skillet over medium-high heat until hot. Add onion and garlic; cook, stirring constantly, 3 minutes or until tender.
  4. Return scallops to skillet; add clam juice, mirin, lemon-pepper, and lemon juice. Simmer 1 minute or until thoroughly heated. Sprinkle with chives before serving!
